Cisternino is situated between the other beautiful towns of Ostuni and Fasano. The Itria Valley is rich in vineyards and centuries-old olive groves and is often referred to as the "California of Apulia". This area of Puglia, steeped in history, is also known for its "slow food movement". Local producers are promoted according to the so-called "zero kilometre principle". The result is fresh produce with a first-class reputation. Full-bodied wine and delicious olive oil, an abundance of fresh vegetables and fish, pasta made from roasted durum wheat and many types of cheese.

Situated on a slight hill in the typical natural landscape of the Itria Valley, it is the ideal place to enjoy the peace and quiet, the flavours of this fascinating region and the simple elegance of the trulli rooms. A highlight is the outdoor swimming pool set in hollowed-out rocks.
